{"id":3921,"date":"2019-10-17T18:01:46","date_gmt":"2019-10-17T16:01:46","guid":{"rendered":"http:\/\/lalaperlavnau.bcntic.com\/crema-de-calabaza-y-coco\/"},"modified":"2019-11-28T14:29:58","modified_gmt":"2019-11-28T13:29:58","slug":"cream-of-pumpkin-and-coconut-soup","status":"publish","type":"post","link":"https:\/\/www.laperlavalles.cat\/en\/cream-of-pumpkin-and-coconut-soup\/","title":{"rendered":"Cream of pumpkin and coconut soup"},"content":{"rendered":"<div class=\"column one-second\">\n<div class=\"et_pb_module et_pb_text et_pb_text_0 et_pb_bg_layout_light  et_pb_text_align_left\">\n<div class=\"et_pb_text_inner\">\n<p><strong>Ingredients (for 4-6 people)<\/strong><\/p>\n<ul>\n<li>1 kg peeled sliced pumpkin<\/li>\n<li>1 large or 2 small leeks<\/li>\n<li>1 tablespoon curry powder<\/li>\n<li>\u00bd tablespoon turmeric<\/li>\n<li>\u00bd tablespoon thyme\u2028-black pepper to taste\u2028-nutmeg<\/li>\n<li>300 ml Aroy-D coconut milk<\/li>\n<li>100 ml milk (or a little more, depending on how thick you want the soup to be)<\/li>\n<li>10 prawns\u2028-grated fresh coconut<\/li>\n<li>salt<\/li>\n<li>extra<\/li>\n<li>virgin olive oil<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<p><\/div>\n<br \/>\n<div class=\"column one-second\"><\/p>\n<p><strong>Preparation\u2028<\/strong><br \/>\nPut a good splash of olive oil in a big saucepan then add the diced pumpkin and the sliced leeks; season to taste and cook over a gentle heat until the pumpkin is tender, about 20 minutes.\u2028If the mixture seems to be getting dry, add a few drops of milk to help the pumpkin cook. When it\u2019s tender and starting to break up, add the Aroy-D coconut milk, curry powder, turmeric, thyme and a grating of nutmeg and adjust the seasoning. Continue cooking for another 10 minutes.<\/p>\n<p><img class=\"alignnone size-medium wp-image-209\" src=\"https:\/\/www.laperlavalles.cat\/wp-content\/uploads\/2019\/10\/receta-coco-263x300.jpg\" alt=\"\" width=\"263\" height=\"300\" \/><\/p>\n<p>When it\u2019s ready, blitz with a hand blender.\u2028Grill the prawns \u2013 either in the shell and then peel them, or you can peel them first (keep back the heads and shells to make a fish stock), cooking them on both sides and seasoning to taste with salt.
