Hummus

Hummus is an appetizer and one of the most popular dishes in the Middle East. It is served with fresh or toasted pita bread and basically consists of puréed chickpeas and lemon juice. Tahini is an essential ingredient for making authentic hummus.

What do you need?
Ingredients for 4 people:

  • 500 g cooked chickpeas
  • Juice of 2 lemons
  • 3 tablespoons tahini
  • 3 crushed garlic cloves
  • 1 teaspoon salt
  • Olive oil
  • Fresh parsley

Preparation:


  1. Purée the chickpeas with a little of the cooking water until you have a smooth paste.
  2. Add the tahini, crushed garlic, lemon juice and salt. Beat to a creamy consistency.
  3. Pile onto a serving dish and drizzle with 1-2 tablespoons extra-virgin olive oil. Scatter with the parsley.
    *You can also add red peppers, chillies or black pepper for a spicier hummus.
